2 Eggs
2 slices bread
2 Tbsp olive oil
mish-mash

Directions:

Pour a bit of your favorite oil in the bottom of a frying pan.
Take a couple pieces of your favorite bread (I use Ezekiel's, or Trader Joe's "spouted grain"-type breads), and cut it into about 1-inch squares, (or rip it with you fingers into about-that-size pieces.)
Place bread into frying pan and let it sizzle in there for a minute or two.
Put the eggs in with the bread, and stir it all up until eggs are done.
Sometimes I'll use egg whites, sometimes I'll add some cut up sausage to the mix, sometimes vegetables, sometimes tofu...many different items can be mixed in, but the eggs/bread is the foundation.
This is a close cousin to "eggy-in-the-hole" which my Mom made for us kids so often growing up.
