3 eggs (room temperature)
1 1/2 cups all-purpose flour
1 1/2 cups milk (room temperature)
1/2 tsp salt
1 Tbs butter, melted

Directions:
Directions:
Preheat oven to 450º.

Spray muffin pan with non-stick vegetable oil.
In mixing bowl, beat eggs slightly.

Add remaining ingredients and beat until smooth. (Do not over beat.)

Fill prepared muffin cups 3/4 full.

Bake 15 minutes, reduce heat to 325º and bake 40-45 minutes or until golden brown. Serve immediately.

I always use my Pampered Chef muffin pan stone for these--I do have a popover pan that makes 6, but they have never turned out as well as in the stone. Also--to re-heat, just put them on a stone at 350 for 5-10 mins.
