1/3 cup maple syrup
1/4 cup ketchup
2 Tbs cider vinegar
1 Tbs butter
2 cloves minced garlic
1 tsp ground ginger
3/4 tsp salt
1/2 tsp ground black pepper
1/4 tsp cayenne pepper
2 Tbs olive oil
4 lbs potatoes, peeled and cut into 1/2 inch cubes
10 bone-in chicken thighs

Preheat oven to 375º. In small saucepan, stir together maple syrup, ketchup, vinegar, butter, garlic, ginger, salt, black pepper, and cayenne. Bring to a simmer over low heat and cook 10 minutes. Meanwhile, pour oil into 9x13 inch broiler-proof baking pan. Add potatoes, toss to coat and bake for 45 minutes. Place chicken on top of potatoes and spoon maple syrup mixture on top. Bake for 25 minutes or until chicken is cooked through and potatoes are tender. Preheat broiler. Broil 8 inches from heat for 1 to 2 minutes or until chicken is carmelized.
