16 jumbo pasta shells
2 tbsp. olive oil
1 onion, finely diced
1 sweet green pepper, finely diced
2 cloves garlic, minced
1 lb. mild sausage, casings removed
1 egg
1/4 cup fresh parsley
2 cups bottled strained tomatoes
1 tsp. dried oregano
pinch of salt
3/4 cup mozzarella cheese
1/4 cup parmesan cheese

Cook pasta until tender, drain.

Heat oil over medium heat; cook onion, green pepper & garlic until softened, about 6 minutes. Transfer to bowl, stir in sausage, egg and parsley. Place heaping 1 tbsp in each of the shells. Arrange in greased 8" square pan. In bowl, stir tomatoes, oregano & salt; spoon over stuffed shells. Spinkle cheeses over and cover. Bake at 425F for 30 minutes. Uncover and bake until cheese is golden (about 10 minutes).
