4 cups diced squash - 2 yellow and 2 zucchini or any combination of the two.
2 tsp. chopped onion
1/2 cup grated carrots (optional but very yummy)
3/4 tsp. salt
1/4 tsp. pepper
1 cup sour cream
1 can cream of chicken soup
2 cups Pepperidge Farm herb stuffing mix
3 tsp. butter melted

Directions:
Directions:
Simmer or steam squash and onion and carrots together until tender. Drain off liquid. Add salt, pepper, sour cream and soup. Mix well.

Layer 9x13 casserole with 1 cup stuffing mix. Pour squash mixture over the stuffing. Sprinkle other cup of stuffing mix over top. Drizzle melted butter over all.

Bake at 350º for 30 minutes or until heated through.
