1 envelope unflavored gelatin
1/2 c. sugar, divided
1/8 t. salt
2 eggs, separated
1-1/4 c. milk
1/2 t. peppermint extract
3 or 4 drops of red food coloring
1 c. heavy cream whipped

Directions:
Directions:
In small saucepan, combine gelatin, 1/4 c. sugar, and salt. Beat egg yolks and milk. Stir into gelatin mixture. Place over low heat, stirring constantly until gelatin dissolves and mixture thickens slightly, about 5 minutes. Remove from heat. Stir in peppermint extract and red food coloring. Chill, stirring occasionally until mixture mounds slightly when dropped from a spoon.

Beat egg whites, and gradually beat in remaining 1/4 c. sugar. Continue beating until stiff peaks form. Fold into gelatin. Finally, fold in whipped cream. Fill chocolate cups.
