6 whole chicken breasts, halved and skinned
1/2 cup flour
5 teaspoons salt
2 teaspoons paprika
1/2 cup butter
4 teaspoons cornstarch
3 cups milk
1/2 cup sherry
2 teaspoons lemon peel or zest
2 teaspoons lemon juice

Up to 1 week before serving, combine flour, salt and paprika on waxed paper. Coat chicken with mixture. Melt butter in large skillet over medium heat. Brown chicken and reserve drippings. Put chicken in separate skillet, add 1/4 cup water and simmer over low heat, covered, for 30 minutes. Arrange in freezer proof/oven proof 13 x 9 baking dish. Mix cornstarch with 1 cup milk and stir into drippings. Add remaining 2 cups milk and the sherry, lemon peel and juice. Cook, stirring constantly, until thickened. Pour over chicken. Cover tightly, wrap and freeze.

Thaw in refrigerator. About 50 minutes before serving, preheat oven to 350º and bake chicken, covered, for 35 minutes or until heated through.

A nice recipe from the olden days, this can be made up ahead, frozen, and then thawed overnight in the refrigerator and served on a day when you're too busy to cook, or when unexpected guests drop by. (Of course, you can just cook it and enjoy it the same day too!)
