1 pound Ground turkey
½ tsp Mrs. Dash
1 tsp Curry powder
½ tsp Pepper
1 can of cream of mushroom soup, low fat (10 oz or 284 ml)
¼ can of 1 % milk

Cooking spray
8 oz. manicotti noodles
8 oz. 1 tub of cottage cheese
24-28 oz 1 jar of pasta sauce
¼ cup low fat Parmesan cheese
1 cup grated low fat mozzarella cheese
Aluminum foil

2 celery stalks
½ red pepper or 1 small
½ large cucumber or one small one
1-cup baby carrots
1Tbsp balsamic vinegar
1 tsp Mrs. Dash

1.Preheat oven to 375 F
2.Brown Turkey in a large non-stick frying pan. Once meat is thoroughly cooked add spices, soup and milk to the pan, in that order. Mix well to combine.
3.Spray 9x13 pan with cooking spray. Tip uncooked manicotti on end and spoon in filling until the shell is about ¾ full. When shells are all filled and in the pan, spoon cottage cheese over top and then spoon pasta sauce over top.
4.Sprinkle on Parmesan cheese and cover tightly with foil shiny side down. Bake for 50 minutes.
5.Wash and chop celery, pepper and cucumber. Rinse baby carrots. Place veggies in a medium size bowl. Toss with olive oil, balsamic vinegar and spice. Let stand in fridge.
6.When the timer rings for manicotti, uncover. Place grated cheese over top. Return to the oven and until the cheese is melted. This will only take about 5 minutes.
