Crunchy Orange Curried Chicken with Potatoes and Spinach Salad Recipe

Ingredients: 10 -12 boneless chicken thighs or 6 chicken breasts (1 ¾ pound or 800 g) ½ cup sweetened orange juice 2 Tbsp brown sugar 2 Tbsp liquid honey 1 Tbsp Dijon mustard (optional) 1 to 2 tsp curry powder 1 tsp pepper 1 tsp Mrs. Dash 1-cup corn flakes crushed 20-24 baby potatoes or 4 large ones cut up in to bite sized pieces 1 Tbsp olive oil 1 Tbsp Mrs. Dash
Salad 350 g pre washed baby spinach 2 oranges cut into small pieces or 1 to 2 cans of mandarin orange pieces Salad dressing 1/3 cup low fat mayonnaise 1/3 cup French vanilla yogurt 2 Tbsp skim milk ¼ tsp poppy seeds ¼ cup dried cranberries (optional) Croutons (optional)

Directions:1.Preheat oven to 350 degrees F. 2.Combine orange juice, brown sugar and honey into a small bowl and stir. 3.Place chicken in a large baking dish. Spoon sauce evenly over the chicken, pour the remaining sauce in the bottom of the pan. Sprinkle with spices and corn flake crumbs. 4.Bake in oven for 40 to 50 minutes or until done. 5.Wash potatoes, cut into bite sized chunks and place into another oven safe dish. Drizzle with olive oil and add spice. Toss until the potatoes are covered. 6.Place potatoes in oven beside chicken and cook for 40 -50 minutes. The potatoes may take longer to cook than the chicken. Check them both when the timer goes and if the potatoes are not done put them back in the oven and turn up the temperature to 400 degrees. Cook until soft. 7.Put salad into a bowl and add oranges. Set aside. 8.Make the dressing. Combine mayonnaise, yogurt, milk and poppy seeds in a small bowl in that order. Stir until smooth. Set aside on table. Pour dressing on to individual sized portions of salad. |
