White Fish with Almonds and Green Grapes Recipe

Ingredients: 2-4 servings of Sole, Cod, or Halibut 4 T Gluten Free Flour or Pancake Mix 2 T Butter or Margarine 1/4 C dry White Wine. White Grape Juice or fish stock 1 T Lemon Juice 1 tsp grated Ginger Root (optional)3/4 C Green Grapes, cut in half 1/2 C Sliced Almonds or blanched Sliver Almonds

Directions:Pat fish pieces dry with a paper towel. Put measured flour in a large shallow dish. Coat fish pieces by turning them several times in the flour. .Heavily sprinkle fish with black pepper and salt. Melt butter or margarine in skillet over medium heat and add ginger root. Stir the ginger, then add coated fish. Saute for 3-4 minutes on each side until the fish forms a golden crust.
While fish is cooking place sliced almonds on a cookie sheet and toast in oven until they just start to turn color. Remove fish on to an ovenproof dish and place in warm in oven. You do not want the fish cooking much just keeping warm.
Add wine, white grape juice or stock to remaining flour that is the dish then put all in same pan you cooked the fish in. Cook, stirring to incorporate bits from the bottom of the pan. Cook until thickened, then add grapes. Cook 4 minutes longer, stirring constantly. Add lemon juice and ginger. Pour thickened wine and grapes over fish pieces when every body is seated. Top with toasted with almonds. Serve immediately. |

Notes: This recipe adapted from the Oregon Cookbook is kind of tricky but always comes out. If you do not have fresh ginger substitute ground ginger spice.
