3 eggs
2 cups of milk
1/2 cup of sugar
3 cups of self-rising flour
1 teaspoon of vanilla

vegetable oil for frying
powdered sugar for dusting

Directions:
Directions:
In a large bowl, cream together the eggs, sugar, milk and vanilla. Add the flour a little at a time mixing well between each addition. The batter will need to be thin enough to run through a funnel. You may need a little more or a little less flour to get the right consistency.
In an 8 inch skillet, heat vegetable oil to 375 degrees F.
Hold your finger over the bottom of a funnel and pour 1/2 cup of batter into the funnel. Hold the funnel close to the oil and remove your finger. Move the funnel in a circular motion so that the batter is spread around in the pan. Carefully turn the cake over with metal tongs or a metal spatula and brown the other side. This will take less than a minute.
Drain on paper towels and dust with powdered sugar, or top with your favorite pie filling!
**When I make funnel cakes, instead of using a funnel, I fill and empty ketchup bottle with batter and squirt it into the oil. I just eye-ball it to get the right amount! Much easier than using a funnel.
