3 C chopped potatoes
1 large onion or shallot chopped
1 large head of cabbage shredded (or 2 bags shredded cabbage)
1 lbs (pronounced libs) smoked sausage or kielbasa sliced
2 C shredded Swiss cheese
1 t nutmeg
3-4 C milk




Directions:
Directions:
Put chopped potatoes in soup pot and just cover with 1 inch of water. Boil until potatoes are soft. Add onions, sausage and cabbage. Cover and simmer on low stirring frequently until cabbage is cooked through. Add salt and pepper to taste. Add milk to cover cabbage. Add cheese and nutmeg simmer on low until cheese melts. Stir often if you turn it too high it will separate and or scorch. If it separates add 2 tablespoons butter and 1 cup cream.

We call it Hot Dog Soup to get kids to try it. Teach them the abbreviation for pounds at the same time!! (LBS is pronouced libs)
