4 c. flour
2 c. uncooked oats
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 1/2 c. butter
2 c. firmly packed brown sugar
1 c. sugar
1 egg
1 tsp vanilla
1 (16oz) can pumpkin (solid pack)
1 c. chocolate chips
Optional, candies, raisins or M & Ms

Directions:
Preheat oven to 350ºF. Combine flour, oats, baking soda, cinnamon and salt. Set aside. Cream butter; gradually add sugars, beat until fluffy. Add egg and vanilla. Mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in chocolate chips. For each cookie, drop 1/4 cup of dough onto a lightly greased cookie sheet, spread into a pumpkin shape, if desired. Add a bit more dough to form stem. Bake 20 minutes or until firm and lightly browned. Cool on wire rack. Use candies, M & Ms, raisins, or icing as face decorations, or leave plain. Yield approx. 32 large cookies.
