1 Large Carton Cottage Cheese
1/2 lb. Saut�ed Mushrooms
1 PKG. Frozen Chopped Spinach
6 Eggs
6 Tbsp. Flour
1 Stick Butter
6 oz. Cheddar Cheese Cubed

Cream Cheese Pastry
8 oz. package cream cheese
1 cup margarine
2 cups flour
1/2 tsp. salt

Directions:
Directions:
Preheat oven to 350
Mix all ingredients together and pour into lightly buttered glass pie pans or cream cheese pastry in muffin tins.
Bake 1 hour.

Cream Cheese Pastry
Combine softened cream cheese and margarine, mixing well until blended. Add flour and salt. Mix well and form into ball. Chill. Divide dough in half. On a lightly floured surface, roll each half into a 12-inch circle. Place in two 9-inch pie plates. Trim and flute edges. Prick bottom and sides with fork. Bake at 450 degrees for 12 to 15 minutes until golden brown.
Variation: For tart shells, divide dough into 24 balls. Roll out each to 6-inch circle. Place in 4-inch tart pans. Trim and flute edges. Prick with a fork. Bake at 450 degrees for 8-10 minutes or until golden brown.

I sometimes substitute egg whites and fresh spinach. For a lower carb option omit the pastry.
