1 cup thinly sliced celery
2 Tbsp butter or margarine
1/2 cup minced onions
1 1/2 pounds sliced hot dogs or ring bologna
2 tsp sage
1/4 tsp pepper
2 packages 8 1/2 oz corn bread mix
2 cups shredded cheese

Directions:
Directions:
Preheat oven to 400. Saute celery and onions in butter until transluscent. Add hot dogs. Saute until hot dogs brown on edges. Take off heat and set aside. In a large bowl mix eggs, milk, sage, pepper, cheese and corn bread mix together. Add hot dog mixture to corn bread mixture. Put into shallow 3-qt greased baking dish and bake for 30 minutes.

Hot dogs was what the original recipe called for. I like to use the ring bologna because it makes it just a little spicy (and we always seem to have it).
