2 bricks (8 oz) cream cheese
2 bricks sharp cheddar cheese


Marinade ingredients:

2/3 cup olive oil
1/2 cup white wine vinegar
1 2 ounce jar diced pimento, drained
3 Tbsp chopped fresh parsley
3 Tbsp minced green onion
3 cloves garlic, minced
1 tsp sugar
3/4 tsp dried basil
salt and pepper
Directions:

Put all marinade ingredients together in a jar and shake vigorously.
Cut the blocks of cheese in half length-wise, then cut those into quarter inch squares, like a pat of butter.
Alternate cheese squares standing on edge in a shallow baking dish.
Pour marinade over cheese and cover and refrigerate overnight.
When serving, place cheese on nice dish and pour marinade over cheese, serve with crackers.
