6 one inch thick well marbled pork chops (bone in preferred )
Can substitute 2 inch cubed pork shoulder (with the fat still on)
3/4 cup soy sauce
1/3 cup vinegar
6 cloves of garlic, minced
1 Tbsp minced fresh ginger
2 bay leaves
1 Tbsp cracked pepper (can grind if you want)

Add the ingredients to a strong plastic bag and mix well. Let marinate/brine overnight.
Bake in 375 F oven for 30 min and then broil for 3-5 min.

I have to admit, the amount of ingredients changes every time I make this because I really hate to measure. I had to guesstimate the amounts above. Before I add the meat (I use chicken also often, but I never tried beef), I taste it to make sure I didn't add too much or too little of one ingredient. Many times I just broil it until done. My mother makes the best version of it and I can't capture it because she also doesn't write or measure anything. She just tastes as she goes along.
