4 filet mignon steaks

Season steaks with course salt and freshly ground pepper.

4 Tablespoons (1/2 stick) butter
4 cups sliced chanterelle or portobello mushrooms
2 cups dry white wine
2 cups heavy whipping cream
1/2 teaspoon coarse salt
whole peppercorns (optional)

Grill the steaks to medium rare, set aside to rest. Melt the butter in a large skillet over medium heat. Add the mushrooms and saute for 5 minutes. Add the wine and reduce the liquid by half. Add the cream, thyme and salt, simmer until the sauce has thickened. Add the steaks to sauce to warm if necessary. Serve the steaks with the sauce spooned over the top and garnished with thyme and whole peppercorns, if desired.
