4 cups cooked rice
1 10oz. box frozen peas, thawed
2 cups diced leftover cooked pork (or chicken)
1 large red bell pepper, diced
2 cloves minced garlic
1/2 cup sliced onion, diced
2 eggs, lightly beaten
1 tbsp. canola oil
1 tsp. rice vinegar
1 tbsp. hoisin sauce
2 tbsp. lower sodium soy sauce

Directions:
Directions:
Combine the soy sauce, hoisen and rice vinegar in a small bowl, set aside.

Heat the oil in a large nonstick skillet over medium high heat. Add the eggs and let them set slightly for about 1 minute. stir gently until cooked and then remove from pan.

Add the onion, garlic and pepper to skillet (add a little oil if necessary)cook stirring occasionally until soft about 3 min.Add the pork and rice, stir and add hoisin mixture. Add peas and cook stirring often until peas are crisp tender and bright green. Remove from heat and stir in the eggs and serve.
