2 whole boneless, skinless chicken breasts, split
2 tsp chicken bouillon cubes
1 1/4 c boiling water
2 TBSP soy sauce
1 TBSP cornstarch
2 tsp brown sugar
1/2 tsp ginger
2 TBSP vegetable oil
8 oz mushrooms
1/2 cup green onions, chopped
1 8 oz. can water chestnuts
1/2 cup cashews

Directions:
Directions:
Dissolve bouillon cubes in water in small saucepan. Combine soy sauce, cornstarch, sugar, ginger. Stir into bouillon mixture.

Chop chicken into bite-sized pieces. In large skillet, brown chicken in oil. Add bouillon mixture; cook & stir until slightly thickened.

Add remaining ingredients except cashews; simmer uncovered 5-8 minutes stirring occasionally. Remove from heat; add 1/4 cup cashews.

Serve over rice. Garnish with remaining cashews
