7 c. whole wheat flour
2/3 c. gluten flour
2 1/2 T. instant yeast
5 c. warm water
2 T. salt
2/3 c. oil
2/3 c. honey or 1 c. sugar
2 1/2 T. bottled lemon juice
5 c. whole wheat flour

Directions:
Directions:
Mix together first 3 ingredients in mixer with dough hook. Add water all at once and mix for 1 minute. Cover and let rest for 10 minutes. Add salt,oil, honey and lemon juice and beat for 1 minute. Add flour last, one cup at a time beating in between each cup. Beat for 10 minutes until dough pulls away from sides of bowl. This makes very soft dough. Turn dough onto oiled counter top, divide into 4 loaves and shape. Let rise until dough is at top of the pans. Place in oven at 350º for 50 minutes. Remove from pans and cool on racks.
