cut potatoes and carrots into serving amounts.
Saute in good vegetable oil or olive oil in a non stick pan.
Be sure to use salt and pepper and maybe garlic.

Can be done on the stove or when they are half done can be added into the roasting pan of the pork or beef roast you are making.
Vegetables are done when they are soft when pierced by a fork.
