3 lbs chicken
1t minced garlic
2 tbsp minced green seasoning( find recipe in Misc. or buy a bottle in a Trinidadian grocer)
1 t salt or to taste
1/2 t hot pepper
2 tbsp vegetable oil
3-4 tbsp curry powder
1/2 c chopped tomatoes
1/2 c chopped onion
1/2 c hot water

Cut chicken in small pieces.Marinate with garlic, green seasoning, salt and hot pepper for 30 minutes. Heat oil in skillet. Mix curry powder with 1/4 c water until smooth and add to hot oil and cook 2-3 minutes. Add chicken and stir to coat in curry, cook down all water until dry. Add tomatoes and onion, cook for a minute. Stir in 1/2 c hot water. Lower heat to med, cover and cook until meat is tender. Add more water if more sauce is required.

My kids love this recipe. Lauren is 14, and as of today, this is the only way Lauren likes chicken...unless they are nuggets from Chik Fila.
Trinis add boiled potatoes, channa peas to this recipe to make it serve more!
