Ingredients: Manicotti Shells: 1 1/2 cups flour 1 1/2 tsp. salt 6 eggs 2 cups water
Fillings:
1) 16 oz. Ricotta Cheese, 1 egg, garlic powder, 1/4 cup grated parmesan, 1 tsp. oregano, salt & pepper to taste 2) 1 lb. ground beef, browned and drained; 3 oz. softened cream cheese, 1/2 package frozen spinach, cooked & squeezed of water. Sauce:
Use your own homemade spaghetti sauce or store bought brand.

Directions:Mix flour and eggs until smooth. Add water and salt. Looks like a crepe mixture (very thin).
Heat a small Teflon pan over medium heat. Put approximately 1-2 tbsp. of egg mixture in pan and spread to cover bottom of pan. Cook until set. Flip if you can, otherwise once set & firm, slide manicotti crepe onto plate and place 3-4 tbsp. of filling onto crepe and roll crepe around filling. Place filled crepe in baking dish lined with sauce. Once baking dish is filled, scoop some more sauce over filled manicotti and sprinkle with grated parmesan cheese. Bake @ 350 degrees 30 - 40 minutes or until hot and bubbly. |

Notes: This is a favorite recipe of mine that was given to me by a good friend's mother who is no longer with us. When first trying to make the manicotti shells, I was very frustrated. The thinner you make them, the better. But, I continued to play with it and was able to make the shells to my liking (not as thin as my friend's mother, but equally good). If you have the time to play with making the shells, do it - the taste is well worth it.
