2 pounds tart apples
1 lemon or the juice from 1 lemon
3/4 cup brown sugar
3 teaspoons flour
pinch of one or all - ground cinnamon, cloves, nutmeg
1 tablespoon butter
double crust pasty

Directions:
Directions:
Line pie pan with pie crust. Peel, core and slice the apples into the bowl with juice. Toss the slices with the juice. Line the bottom pie crust with a layer of apple slices. Strew the layers with a third of the brown sugar and a third of the flour. Repeat layers until these ingredients are used up. Strew spices over the top and dot with butter. Cover with top crust, crimp the edges, and prick with a fork to vent.
Bake in a 425 degree oven for 10 minutes, then reduce heat to 350 degrees and bake 30 to 35 minutes more, until crust is brown.
