4 eggs, separated
12 soda crackers, rolled fine
1 1/2 c. pineapple, crushed
1/2 c. milk
2 T. butter
3 T. grated cheese

Directions:
Directions:
Beat egg yolks, add milk and cracker crumbs. Fold in stiffly beaten egg whites. Pour into skillet or omelet pan in which butter has been melted. Cover and cook until bottom is brown. While cooking omelet, let pineapple simmer to thicken juices. Pour hot panpipes on half of cooked omelet, fold over and transfer to hot platter. Sprinkle with grated cheese and put under boiler for a minute to melt cheese. Serve at once.
