Sockeye Salmon or Coho Salmon or Wild Alaskan Salmon (not Atlantic Salmon)

Rub salmon filets with salt (sea salt, kosher or other), let stand for 20 minutes and then rinse it off. Cover salmon filets with brown sugar for 20 minutes. Bake (with brown sugar on) for 20 minutes at 350º.

I like to add some Dijon mustard on top of the brown sugar, when baking, to add a little zing.
