2 cs. butter
2 tsps. vanilla
1 egg
4 1/2 cs. sifted flour
1 c. sugar

Directions:
Cookies are baked at 375F.
Combine all ingredients adding flour last and being sure not to overmix after adding flour.
Chill the dough at least one hour to make it easier to roll out.
Remove about 1/4 of the dough and roll out. Cut into shapes and bake on an ungreased cookie sheet for 6-9 minutes. Cookies should not be brown. Frost cookies with butter cream frosting when cool and let frosting harden before storing.

The trick to tender cookies I've found is not to overmix the dough or to over flour when rolling out the cookies. I roll mine out on plastic wrap. I've found the cookies don't stick and I do not use much flour to roll them out.
