1 c. sugar or 3/4 c. Splenda
1 c. canned pumpkin
1/2 c. shortening or soy margarine
2 c. white flour or 1-3/4 c. whole wheat pastry flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1/2 c. raisins
1/2 c. nuts, chopped

Directions:
Directions:
Cream sugar and shortening together then add pumpkin.
Stir flour, baking powder, baking soda, cinnamon and salt together before adding to the creamed mix.
Add raisins and nuts last.
Drop by spoonfuls on ungreased baking sheet. Bake at 375 for 8 to 10 minutes.

The whole wheat flour will use more moisture so I gave an approximate on the amount.
