2 c. (1/2" pieces) cooked chicken
1 c. sour cream
salt, pepper (to taste)
12, 5" corn tortillas
oil
4 oz. can chopped green chiles, drained, or 10 oz. can green or red enchilada sauce
2 c. monterey jack or cheddar cheese, shredded
lettuce, tomatoes, sour cream, guacamole, tortilla chips

Directions:

Combine chicken, sour cream, salt & pepper. Quickly fry 1 tortilla at a time in oil, just to soften. Spoon a heaping tablespoon of chicken mixture onto each, roll up. Put seam down in oiled 13 X 9 dish. When all filled spoon sauce on top, top with cheese. Bake 400º 12-15 min. to melt cheese and hot. Serve with lettuce, tomato and any of the toppings.
