2 cups of sifted flour
2 tsp. baking soda
2 tsp. cinnamon
2 cups of sugar
1 tsp.vanilla
3 cups grated carrots
1 and 1/2 cups of canola oil
4 eggs
1 cup chopped nuts

Beat all ingredients for 4 minutes at medium speed.
Bake in 2, 9 inch round pans at 325 for 25- 30 minutes.

Frosting: Soften1 8oz cream cheese and 3/4 cup butter and blend together. Add 16oz box of conf. sugar and 1 tsp. of vanilla. Beat until smooth.
