1 c. butter, softened
1/3 c. whipping cream
2 c. flour
granulated sugar

for filling:
1/4 c. soft butter
3/4 c. powdered sugar
1 t. vanilla
food coloring, optional

Directions:
Directions:
Mix together butter, cream and flour. Cover and chill.

Heat over to 375. roll about 1/3 of dough at a time 1/8 inch thick on floured surface. Cut into 1/2 inch circles. Transfer rounds with spatula to wax paper that is heavily covered with granulated sugar. Turn each round so both sides are coated.

Place rounds on ungreased cookie sheet. Prick rounds with fork 4 times. Bake 7-9 minutes until set but not brown. Cool completely.

Make filling by creaming all ingredients together until smooth and fluffy. Tint with food coloring. (Add a few drops of water if necessary for proper spreading consistency.)

Assemble cookies by putting the rounds together in pairs with filling between.
