5 lg. eggs
3 c. sugar
1 c. oil
1 c. buttermilk
1 T. vanilla
3 c. flour
1 T. soda
1 T. cinnamon
3 c. grated carrots
1 can (20 oz.) pineapple, crushed, drained
1-1/2 c. walnuts, chopped
1-1/2 c. coconut (5 oz.)

Frosting:
1/2 c. butter, softened
1 8 oz. cream cheese, softened
1/2 c. powder sugar
1 tsp. vanilla or pineapple juice
Mix all together

Mix eggs, sugar, oil, buttermilk, and vanilla till blended. Whisk in flour, soda, cinnamon, then stir in remaining ingred. Scrape batter into 13 X 9 in pan. Bake at 325º for 1 hr. Cool. Spread frosting on cooled cake.
