1 cup brown sugar
1/2 cup oil (olive or vegetable)
3 ripe bananas, mashed
2 cups flour
1 tsp. baking soda
1/8 tsp. salt
1 cup chopped nuts or raisins, optional

Directions:
Directions:
Mix dry ingredients. Add bananas and oil. Mix until just moistened. Spoon into greased muffin cups. Bake at 350º x 10-15 minutes, or until toothpick inserted in the center comes out clean. Remove to wire racks to cool.

Great recipe for those with food allergies since it contains no eggs or dairy and nuts are optional. I often use half whole wheat flour and half all-purpose flour. The muffins will freeze well, for quick breakfasts or snacks!
