For cookie wafers: 3/4 cup butter, softened, 3/4 cup sugar, 3 TB Kahlua, 2 TB instant coffee granules, 1 tsp vanilla, 2 cups all purpose flour, 1/4 tsp baking powder, 1/2 tsp salt.

Beat butter at medieum speed with mixer until creamy. Gradually add sugar, beating well. Stir together the Kahlua, cofee granules, and vanilla until coffee dissolves; add to butter mixture, beating til blended. Combine flour, baking powder, and salt. Add to butter mixure, beating at low speed til just blended. Turn dough out onto lightly floured surfance and roll to 1/8 inch thickness. Cut with a floured 3 inch round cutter, and place 1 inch apart onto lightly greased baking sheet. Bake at 375º for 7 minutes or until cookies are lightly browned. Remove to wire racks to cool.

Once these are cooled, spread your favorite ice cream or frozen yogurt on a wager about 3/4 inch thickness and top with another wafer. Wrap in plastic and return to freezer til solidly frozen. French vanilla is great with these! If you want to dress them up, roll the ice cream circumference in colored sugar or sprinkles before freezing.
