4 boneless, skinless chicken breast halves
1 tsp olive oil
1 garlic clove, minced
2 tsps water
1 tsp Worcestershire sauce
1 egg white
1/4 tsp salt
2/3 cup freshly grated Parmesan cheese (3 oz)
1/2 cup finely crushed cornflackes
1/3 cup chopped flat leaf parsley

Preheat oven to 350º. Coat a baking sheet with nonstick spray. In a small microwavable cup, combine the oil and garlic. Cook in the microwave on high for 30 seconds, or until fragrant. In a shallow bowl, beat together the water, Worcestershire sauce, egg white, and salt. Stir in the garlic mixture. In another shallow bowl, combine the cheese, cornflake crumbs, and parsley. Dip a chicken breast in the egg mixture to coat. Dredge in the cornflake crumb mixture to coat completely. Place on the prepared baking sheet. Repeat with remaining chicken, then lightly coat the chicken with nonstick spray (to make it cripier when baking). Bake for 35 minutes, or until a thermometer in the thickest portion registers 160º and the juices run clear

This is less than 300 calories per serving, and also is a great recipe for those avoiding wheat. So easy and fast, you may want to consider doubling for leftovers! Very important to use FRESHLY GRATED Paremesan for maximum flavor.....and, I used just a bit more cornflakes to cover the chicken, since my pcs were very large.
