6 Cloves of Garlic
2 Stalks of Celery
1 Minced Onion
2 tbsp of Olive Oil (EVOO)
12 cups Chicken Broth
Salt
3/4 cup Orzo
6 cups of Escarole or Spinach
1 1/2 cups of sliced or cubed Pork
1 can of Cannelloni Beans
6 tbsp Freshly ground Parmesan

Directions:
Directions:
Combine the garlic, celery, onion and olive oil in a large pot. Saute until tender, add the oregano and cook for 2 minutes. Add the chicken broth and bring it to a boil. Add the orzo and boil for 4minutes before adding the shredded escarole or spinach and cook for 5 minutes. Combine the pork and cannelloni beans. Remove from heat. Stir in the Parmesan cheese and serve.
