3-1/2 lbs garnet or jewel yams
3/4 cup nonfat or low-fat sour cream
About 2 T grated lemon peel
1/4 tsp ground nutmeg

Directions:
Directions:
Peel yams and cut into 1/2 inch pieces; steam until tender when pierced with a fork, about 15 minutes. Place yams in a large bowl, add sour cream, lemon peel and nutmeg; beat with an electric mixer on medium until smooth, about 3 minutes. Spoon into a buttered 1-1/2 to 2 qt casserole. If making ahead, cover and chill up to 1 day.

Place covered casserole into a 375º oven until yams are hot, about 20 minutes (30 mins if yams have been chilled). Garnish with additional lemon peel.
