4-8 chicken breasts, poached
2 packages Uncle Ben’s wild rice
Chicken broth
1 onion diced
1 cup cream
1 package fresh mushrooms
Salt & Pepper
Grated cheese

Directions:
Poach chicken and shred or cut into bite-sized pieces.
Saute onions and mushrooms with a tbsp of butter.
Cook rice according to directions.
Combine chicken, rice, onions, mushrooms, salt and pepper to taste. Place in a 9x13 pan. Add enough chicken broth to cover about half the casserole. Bake at 350 degrees for 1 hour, or until chicken broth as cooked out. Top with cheese previous to serving.
