2 eggplants ( about a1 1/2 pounds) sliced 1/4 inch thick
4 zucchini ( about 2 pounds) sliced 1/4 inch thick
salt and pepper
1/4 c. extra-virgin olive oil
1 bunch scallions, thinly sliced
3 cloves garlic, finely chopped
3/4 pound ground beef
1 15 ounce crushed tomato
3 ounce Gruyere cheese, shredded
1 pint low fat cottage cheese

Preheat oven to 500. Line 2 baking sheets w/ parchment paper. Place eggplant and zucchini in 2 large bowls and season w/ salt. Let stand for 40 minutes, rinse and pat dry. On a single layer of the prepared pans toss w/ 3 T. oil and bake for 20 minutes. Transfer to baking dish. Lower the heat to 350. Meanwhile in a skillet, heat 1 T. oil with scallions and garlic. Cook for 2 minutes add beef till meat is done, Add tomatoes and simmer. Season w/ salt and pepper. Pour the meat over the vegetable and top w/ half of the Gruyere. Spoon cottage cheese over the moussaks and put the rest of the Gruyere cheese over the top. Bake for 18 minutes. Transfer to broiler and cook for 3 minutes. Let stand for 15 minutes.
