2 1/2 to 3 cups milk
3 T butter
3 T flour
2 T dry mustard (regular works too)
2 c. shredded cheddar (sharper = tastier)
12 oz. elbow macaroni
salt / pepper to taste
bread crumbs

Directions:
Directions:
Begin by melting butter in medium saucepan.
Remove from heat and add flour while stirring to create sauce base (roux)
Add mustard
Return to heat
Add milk slowly and stir to mix
Add all but 1/2 cup of shredded cheese
Stir and heat until sauce comes to gentle boil, continue to heat for about a minute
Add sauce to cooked pasta and combine in a greased 13x9 baking dish
Cover with bread crumbs (although I have varied this many times with Ritz, Cheezits, Saltines, etc...)
Sprinkle remaining cheese
Put in oven @ 350 degrees for 25-30 minutes or until crusts is brown & bubbly

I have made many variations on this by adding diced tomatoes
green peppers
sausage (mild or hot)
