Crust:
1 pkg. graham crackers, crushed
1 stick butter, melted
1/4 c. white sugar
Mix together and pat into greased 9x9 pan, pushing up on the sides.
Filling:
2 (8oz.) pkgs cream cheese softened
1/2 c. sugar
1 tsp. vanilla extract
2 eggs

With an electric mixer, beat until blended; pour into crust and bake at 350º for 40 minutes or until center is almost set. Refrigerate 3 hours or overnight. You can add a fruit topping about 30 minutes after you take the cheesecake out of the oven.
For fruit topping, cook 4 cups fruit with 1 cup sugar and 3 tbsp. minute tapioca and cool. Pour over cheesecake and refrigerate.

Cherries, strawberries & blackberries are all good on top. For another topping drizzle chocolate syrup and sprinkle heath chips over.
