1 can (15.5oz) black beans, rinsed and drained
2 oz jalapeņo-monterey jack cheese, shredded
1 jar (2oz)sliced pimientos, drained and chopped
1 lime, juiced (2T)
2 T chopped fresh cilantro
40 ruffled tortilla cups
1/2 c reduced-fat sour cream

In Microwave-safe bowl, combine black beans, cheese, pimientos, lime juice and cilantro. Cover with plastic wrap; microwave 1 min.,or until cheese is melted. Season with 1/2 tsp salt, if desired. Divide mixture evenly among tortilla cups. Top each with a dollop of sour cream.
