11 vanilla sandwich cream cookies, crushed
3 tbsp. butter, melted
24 oz. cream cheese
3/4 c. sugar
5 tsp. cornstarch
3 eggs
1 egg yolk
2/3 c. pureed bananas
Banana flavoring
1 1/4 tsp. vanilla

Mix cookie crumbs and butter together. Press crumb mixture in bottom of 9 in. springform pan. Mix cream cheese, sugar and cornstarch. Beat till smooth. Add eggs and yolk, one at a time. Beat in bananas and flavoring. Pour the mixture over crust. Bake 350º for 15 minutes. Lower temperature to 225º and bake for 1 hour and 10 minutes until center no longer looks wet and shiny. Remove cake from oven. Run a knife around the inside edge of pan. Turn oven off. Return the cake to the oven for 30 minutes. Chill, uncovered overnight.
