1 1/2 lbs boneless pork chops, cut into 2 inch strips
1 small onion, coarsely chopped
1 small red bell pepper, coarsely chopped
3 (15 oz) cans black beans
1 (16 oz) jar salsa
1/2 cup chicken broth
1 tsp oregano
1 tsp cumin
2 teaspoons Tony Chachere's Original Creole Seasoning (or chili powder)

Directions:
Directions:
Combine pork, onion, red pepper, black beans, salsa, chicken broth, oregano, cumin and Tony Chachere's in slow cooker. Set to low and cook for 8-10 hours.

Break up pieces of cooked pork to thicken the stew before serving. Serve over rice.

You can temper this anyway you'd like--if you like it hot, use hot salsa and add a small can jalapenos.
