Mom's Thanksgiving Sweet Potatoes Recipe

5 large sweet potatoes or yams, peeled and diced
1/3 c brown sugar
1/4 c butter/margarine
1/2 c milk
2 eggs, beaten
1 tbsp pumpkin pie spice

Topping:
1/2 c sugar
2 tbsp ground cinnamon
1/3 c crushed walnuts
1 pkg mini marshmallows

Directions:
Directions:
In a large saucepan add enough water to cover potatoes and boil until soft.

Drain potatoes, add to large mixing bowl, immediately mash by hand adding butter to mixture.

Add milk, eggs and spices, mix well.

Add to greased 13x9 in baking dish.

In a small mixing bowl, add sugar cinnamon and nuts, mix well.

Sprinkle sugar/nut mixture over top of potatoes.

Bake at 350º F for 40 mins. Remove from oven and cover top of potatoes with mini marshmallows leaving a1/2 inch gap to side of baking dish.

Return to oven and bake until marshmallows are golden brown.
