8 chicken breasts boneless and skinless
1/2 c flour (wondra is preferred)
1 tsp. salt
black pepper to taste
1 tsp oregano
8 tbsp oil
8 tbsp butter or margarine
2 cups fresh sliced white mushrooms
1 cup marsala wine

Directions:
Directions:
Pound the chicken till pieces are about 1/4 in thick. Combine flour, salt, pepper, oregano. Dredge the chicken in the seasoning blend.
Heat the oil and butter combination in large frying pan. Cook breasts in medium heat about 2 minutes on each side till golden brown. Add mushrooms to the chicken and add the wine. Simmer about 10 minutes.

Sam also suggests making a chicken picatta using white wine, a squirt of lemon juice and chicken broth. Similar directions from regular recipe. Simmer again about 10 minutes, serve with risotto rice.
