2 tablespoons of olive oil
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
2 garlic cloves, chopped
salt & pepper
1/2 can (14 1/2 oz) diced tomatoes
1 lb. lentils
Low sodium chicken broth (about 12 cups) or sufficient amount to achieve soupy consistency
5 fresh thyme springs
1 cup shredded Parmesan cheese

Heat oil in a large pot. Add onions, carrots, and celery. Add the garlic, salt and pepper. Saute until veggies are tender - about 8 to 10 minutes. Add the lentils and mix. Add the broth and stir. Add the thyme springs. Bring to a boil then simmer for about 45 minutes to an hour (or until lentils are tender). Sprinkle the soup with Parmesan cheese. Add a little more olive oil and serve.

Optional: about 1/2 cups of elbow pasta may be added and cooked in the lentil mixture. Serve with hot French bread.
