6 Yolks 1 tsp. vanilla
8 whites 1/4 tsp. cream of tartar
1/2 cup flour
1 cup sugar
2 Tbls. butter
3/4 cup cocoa
2 cups milk

Directions:
Directions:
Separate eggs
Prepare souffle bowl with collar and grease well-sugar dish. Blend 1/2 cup flour with 3/4 cup coc oa and 3/4 cup sugar in pan. Add milk slowly. Beat eggs, add butter to chocolate mixture and add to yolks with vanilla Beat whites until froth forms and add cream of tartar.Add 1/4 cup sugar. Fold whites with chocolate mixture 1/3 at a time.

Bake in bain marie on lower shelf at 350 for 40-45 minutes.
