4 lg onions sliced
4 tab butter
4 tsp flour 4 pints strong beef stock
1 lg carrot
grated Gruyere
sliced stale French bread
oil Parmesan cheese

Directions:
Directions:
Brown onions. Sprinkle with flour to brown.Add stock and carrot.
Simmer for 45 minutes. Remove carrot.
Spoon soup into individual oven proof bowls.Top with croutons and heap with grated cheese. Dribble bit of oil on top and place under broiler till brown.
